The Eye Test: Clear, bright eyes = recently caught. Cloudy or sunken eyes = 3+ days on ice.

The Smell Test: Genuinely fresh fish smells like the sea — saline, clean, almost neutral. Ammonia or heavy “fishy” odour means protein breakdown has already begun.

The Finger Press Test: Press the flesh lightly. It should spring back immediately. If your fingerprint stays, the muscle tissue is already degrading.
